Cucumber Sandwiches with a Twist

Ingredients
(* indicates my preferred ingredients – see notes for alternatives)
4 tablespoons O&V Lemon Dressing *
4 tablespoons crumbled cotija cheese
1½ tablespoons minced parsley
¼ teaspoon fresh cracked pepper
1 cup thinly sliced English cucumber
½ cup arugula microgreens or baby arugula
4 slices wheat bread (thin-sliced) or 2 wheat sandwich thins, lightly toasted
Salt to taste
Preparation
Stir lemon dressing with the cotija cheese, parsley and fresh cracked pepper.
Spread the mixture over the 4 slices of toasted bread. Lay the cucumber slices on 2 slices of bread, top with the arugula microgreens and a light sprinkle of salt. Top with the other two slices of toasted bread.
Cut into half or into fingers and serve immediately

* The Lemon Dressing has such a wonderful herby, citrusy flavor that pairs perfectly with the cucumbers. Feel free to email me for a homemade option.
