Cauliflower Rice Recipe

Cilantro Lime Cauliflower Rice

Ingredients

(* indicates my preferred ingredients – see notes for alternatives)

 

1 head of cauliflower

1½ tablespoons O&V Lime Oil *

Salt and pepper to taste

1/8 teaspoon cumin powder

1/8 teaspoon coriander powder

½ cup chopped cilantro

 

 

Preparation

 

Preheat the oven to 400 F

 

Remove the outer leaves of the cauliflower, cut into quarters and remove most of the core. Cut the quarters into large chunks. Dry the cauliflower pieces well with a paper towel.

 

Place in batches in a food processor and pulse for about 30 seconds till the cauliflower resembles rice or couscous

 

Toss the rice in a drizzle of olive oil, the cumin, coriander and season with salt and pepper to taste.

 

Spread the mixture in a thin layer on a cookie sheet

 

Roast in the oven for 10-12 minutes. Remove from the oven and toss through with the cilantro

 

 

Serves 4

Active time 8 minutes Total Time: 20 minutes

 

 

Notes

* The Lime Oil adds a fabulous citrusy flavor. Feel free to substitute with Moroccan Spice oil for some zing or any other flavored oil instead to suit your palate and what you are serving it with.

 

You can use an Unflavored EVOO instead, just remember to use high quality products that provide good flavor and health benefits.
