Fall Inspired Potato Side!
Easy, tasty truffle pesto potatoes give a new and upscale twist to a classic side!
This couldn’t be any simpler, and the truffle flavored pesto adds a nice cool weather touch to this side dish. I love to add some fresh or frozen (thawed) peas for added color, crunch and veggie goodness, but you can leave them out or substitute with blanched green beans or even some thinly sliced and sautéed brussels sprouts.
BE BRAVE and change it up by roasting your potatoes instead of boiling them and serving the dish warm instead of at room temperature. A wonderful new twist to your Thanksgiving or Christmas sides.
Happy cooking and entertaining!

If you decide to serve this dish with roasted potatoes, simply drizzle them with a little EVOO and roast in a 425 F oven for 20-25 minutes stirring at the halfway point. Once cooked through and browned on the outside, remove from the oven and toss with pesto, lemon zest, lemon juice, salt, pepper, and peas. Serve warm
